In a small bowl mix together the olive oil, honey, garlic, ginger, soy sauce, and rice vinegar. Whisk until combined. Place cubed chicken in a ziplock bag and add 3/4 of the marinade. Seal and let marinate in refrigerator for at least 30 minutes or overnight. Keep the remaining marinade in an airtight container in the refrigerator until ready to grill the chicken.
At least 20 minutes before grilling, soak the skewers in water. Thread the marinated chicken and pineapple cubes carefully onto each skewer. Preheat grill to medium high. Grill skewers on all sides until cooked through, about 8-10 minutes. Baste with the reserved marinade while they cook. Serve with the chopped cilantro.
